Dudes. I am so blog-tired. I have spent the day working on a new blogging side project. It’s something I am totally excited about, but after today I am losing momentum. My fault. I should have been working on it all weekend, but being that I am sick AND had to work, I frankly didn’t have the energy. So I had to write 3 posts today. And deal with the Day One Frustration that any new project might have. *sigh* I just hope everything starts to make sense and that it becomes the really fun endeavor that it’s supposed to be. It’ll launch soon so wait for more details on that…
As for tonight, it’s my turn to cook. Ugh. So I decided to save myself a trip to the store. So I decided to doctor up last night’s leftovers, Chicken Fajitas.
I took a Boboli crust, spread it with refried beans (thinned with sour cream), and salsa. Then I spooned the Fajitas mixture over that, topped with pepper jack cheese and baked at 350 for 25 minutes. Tasty!
